How does the Bible use numbers?

I have been told that the numbering system in the Bible is similar to Roman Numerals.

How did Moses count?

How literal are the numbers of the Exodus when counting the Jews that left Egypt?

They count using their Alphabet

It would be like saying A=1; B=2, etc.
