Catholics (for example) are free to believe in either or both. Teaching evolution is just as acceptable for Catholics as it is for atheists. So you could argue that these public schools are teaching Catholicism by teaching evolution. But that doesn’t suit some people’s argument, you see.
Evolution is in the field of science because it is something that scientists have put forward, and offered scientific proofs. Therefore it is only right that it belongs in a science lesson. Atheists are happy with this because it is the only explanation for the beginning of the world that they can believe in, and Catholics should be happy with this because it is a scientific explanation and we are not taught that the Bible version is 100% truth.
May I modify your last sentence above. Truth has a number of meanings in regard to Scripture. The Bible presents the truths of Divine Revelation. Divine Revelation as contained in the Catholic Deposit of Faith is 100 % truth. What I think you are referring to is that the Bible contains some figurative language. With the guidance of the Holy Spirit, Catholic Church Councils have discerned the true reality which is expressed in figurative language.
