Would it be correct to say that when you get married, you ‘dedicate your life to God by dedicating your life to your spouse’?

Yes. You are living out a vocation, which is a call from God in the married state.
Some favorite ideas:
A married couple does not gaze at one another…together they gaze outward at God and his kingdom.

A married couple is not merely two people living life together, they are two people who create a third reality, the “transcendent third”.

Marriage is the primordial sacrament, as expressed by JP2 in TOB. Marriage is a sign to the world of God’s very inner life. God’s inner life, God’s loving mercy, God’s Trinitarian love.
