For OT writings they could be called Pseudepigrapha
For NT writings they could be called either Gnostic writings or Early Church Fathers.

It’s not a dumb question - the dumb one is the one that is not asked when one has a question. Deutero means second, Proto means first. This distinction is artificial as it was introduced long after the canon was determined and used for many centuries, but the word would be protocanon.
