I just had a few bites of a cheese sandwich but I stopped because I wasn’t sure if breaking my fast would be a sin or not.

I looked it up and it turns out that it is a mortal sin.

My understanding is that fasting entails the eating of three small meals with no meat on Ash Wednesday and Fridays.

No, it’s one larger meal and two small ones that do not add up to be as large as the larger meal on Ash Wednesday and Good Friday.
