Did the Church change the Sabbath and dietary laws?

Hello you all, blessings to you & yours.

I am papapee, and my brother is beginning to worry me. He is now of the opinion ( adamantly) that the:
  1. catholic church is wrong in worshiping on Sunday. The Sabbath, Saturday, is the unchanging Holy day. Jesus never changed it!
  2. We are not supposed to eat: pork, anything with cloven hoofs etc, shell fish, or any of the other stuff listed as forbidden in the old testament.
He believes that the catholic church was instituted by Christ, but has been compromised by human traditions etc over the centuries.
And now our salvation is in jeopardy.

What is the churches teaching on these?
