So, just wondering, why do some images of the Divine Mercy show Christ with wounds in his hands and feet, while others do not? Which one is the correct image, or is there a correct one, and why the disparity?

The original Divine Mercy image painted at the direction of St Faustina is this one:

(Please Note: This uploaded content is no longer available.)

It was painted in Vilnius, Lithuania before WWII and currently hangs over the altar in the Shrine of the Divine Mercy in Vilnius.

The reason why there are other paintings that have many variations is that after WWII, the Soviets took over Vilnius, closed the churches including the one where the original painting was, and the original was hidden away for years and passed through a series of owners. A number of poor quality small copies of it had been made and distributed before it was hidden, and as the Divine Mercy devotion started to spread, artists used these poor quality copies to paint their own versions which had a lot of different variations from the original. Some of these became very popular in places like USA.

After the fall of Communism and the un-suppression of the devotion, the original was finally found and restored to Vilnius, and later placed in its own shrine.
