If a Catholic divorces and remarries, and an annullment is not granted, does that person have any opportunity for salvation short of leaving his/her current legal spouse?

There is no soul outside of the mercy of God, nor any that cannot be reached by ways known only to God. Therefore, even if someone dies in what seems to be a hardened case of mortal sin, the Church still offers prayers for their souls and encourages the faithful to do the same.

As for those actually in the situation, they ought to consult with their pastor about how to proceed. It is not a simple question to answer, but depends on the situation. If you know someone in this situation, you’d do well to encourage them to do that, and to pray for them.

wouldn’t that depend on how the couple is living? i mean, to remain in a state or mortal sin, adultery, is BAD, don’t they have just as much opportunity for heaven if they remain chaste as those not divorced and remarried?

Define chaste. The Catholic Church has a rather strict rule on this.

Talk to your pastor. I can see that there might be good reasons for the couple to maintain their current civil married status and communal life, such as if there are children involved or if one spouse is dependent on the other due to disability, but they would need to cease all the sexual aspects of their relationship which make it sinful, repent, go to confession, and then live together as two platonic friends, as friends with no benefits.
