Do blood sausages violate Jewish law for Catholics?

When Paul taught of removing the food consumption restrictions imposed under the Old Testament laws he did not remove the two restrictions, one of which was the prohibition of consuming blood. Why then are blood sausages acceptable for consumption and a holiday delight?
