Do there have to be god-parents

Can. 872: In so far as possible, a person being baptised is to be assigned a sponsor.

Can. 875: Whoever administers baptism is to take care that if there is not a sponsor present, there is at least one witness who can prove that the baptism was conferred.

Please speak to your priests concerning this matter. The Canon also allows sponsor not to be present at the baptism. I could not confirm Can. 872/875 in the Catechism of the Catholic Church. However, The Faith Explained by Leo J. Trese states that sponsors are required. God Bless.
 
Actually, I think if you pull a search in CAF, you will find a place where it says godparents are not necessary for validity. However, if you’re using them, you do only need one. It does not need to be a relative. This person is assisting your child spiritually, and has no standing in court if God forbid something were to happen to you and your child needed a guardian.

No, Godparent(s) is/are required for licitness however not validity.

For solemn Baptism (not an emergency situation) at least one Godparent is required.
