I’ve noticed that, in some churches, we bow during the part of the Nicene Creed that says “by the power of the Holy Spirit he was born of the Virgin Mary and became man” and in some churches we don’t. Why do we bow during that part?

As a gesture of reverence for the Incarnation, during the Nicene Creed all bow at the words “By the power of the Holy Spirit he was born of the Virgin Mary and made man” (GIRM 275). On the solemnities of the Annunciation and Christmas, all kneel.
