In 2 Thessalonians 2:15 he tells Christians to hold fast on his oral teachings. What are these? Do we have historical proof (like a letter or statement from early church fathers)?
This is generally seen as an attestation of oral tradition being necessary alongside written tradition (Scripture). Not everything in Christian teaching was written in the New Testament. We can know these teachings by what the Church has taught and how Her members have acted throughout the centuries.
