Does going to any Mass offered on a Holy day fulfill the obligation?

Does going to any Mass offered on a Holy day fulfill the obligation?

So for example: If a parish offers mass at the normal 8AM and Noon but has added a Mass for the Holy day, say at 7PM, do any of these Masses count towards the obligation or does only the 7PM Mass count?

If the Mass is on the Holy Day itself, then all Masses on the schedule you describe would be for that Holy Day. The parish simply added another Mass to accommodate as many people as possible. So, yes, attending any of the Masses would fulfill the obligation.
