Does missing Mass send you to hell?

In the past few weeks I have heard Karl Keating and Jimmy Akin give the example of a Catholic missing and Sunday Mass and dying without confesion will go to hell, based in the fact that if you die in mortal sin you will go to hell, but what I don’t understand is how we can put limit to what God can forgive, or wasn’t Jesus who told the thief “today you will be with me in heaven”?

How can we know that God won’t forgive a mortal sin or then why do we pray “pray for us now and in the hour of our death”?
