Why do you use different sets? For the EF, the chalice veil and burse are required, as is the purification rite at the altar during the Mass. For the OF, all are optional; the sacred vessels may be purified at a side table after the Mass.
We use special chalice veils and burses for the EF; these sets are the same material and color as the priest’s (Roman) chasuble and maniple. So far, we have a set in gold, black, and violet.
We use “everyday” chalice veils and burses for the OF–Sunday and daily Masses. We have all the liturgical colors.
At most Masses, purification of the sacred vessels is done by the priest or deacon at the altar. At bigger Masses, with four chalices offered for the people, the purification of those vessels is done after Mass by the priest or deacon.
Lay people may not purify the vessels. As sacristan, I wash them thoroughly with soap and water after the ritual purification is complete.
Our priests use both a veil and a burse, except occasionally for daily Mass. I know that most of our vestments and other liturgical items belong to the parish, but each priest also owns some of his own. I can’t say which is which.
We do not distribute the Precious Blood, so their is only the priest’s own chalice which he purifies at the altar. The empty ciboria are carried back to the sacristy by the altar boys. The remaining hosts are reserved by the priest - the tabernacle is a few steps away from the altar in the sanctuary.
