Regarding the NT being written by Jews, I beg to disagree with you. For your surprise, none of the books of the NT
was written by Jews. Even Paul, from the moment he decided to defect from Judaism and start a new religion, Christianity, he ceased being Jewish. That’s how it goes according to Halacha in

I thought I’d share this thought from Paul, in case you didn’t know that, as a Christian, he considered himself to be a faithful Jew:
But this I confess to you, that according to the Way, which they call a sect, I worship the God of our fathers, believing everything laid down by the Law and written in the Prophets, having a hope in God, which these men themselves accept, that there will be a resurrection of both the just and the unjust. So I always take pains to have a clear conscience toward both God and man. …] let these men themselves say what wrongdoing they found when I stood before the council, other than this one thing that I cried out while standing among them: ‘It is with respect to the resurrection of the dead that I am on trial before you this day’ (Acts 24:14-21).

And with regards to “the Kenizzite Caleb, son of Jephunneh,” that’s how it reads in the original in Hebrew. Whatever it says in the several English translations, it may affect Christians but not Jews.

Having only checked Joshua 14:14 in all of the following texts, I can say that
this Hebrew text does not share your order of words for this verse. Neither does
this Hebrew text, provided by the Hebrew University of Jerusalem. Nor
this one, provided by Mechon Mamre, “a small group of observant Jewish Torah scholars.”
This Hebew text also does not share your order of words. And, finally,
this Hebrew text also does not share your order. Some of these examples may be superfluous since some of them may be based on the same underlying text. I didn’t take the time to check.
The following examples are taken from the passages as found on the Hebrew University of Jerusalem’s website:
Numbers 32:12: כָּלֵב בֶּן-יְפֻנֶּה, הַקְּנִזִּי
Joshua 14:6: כָּלֵב בֶּן-יְפֻנֶּה הַקְּנִזִּי
Joshua 14:14: לְכָלֵב בֶּן-יְפֻנֶּה הַקְּנִזִּי
All read, “Caleb (or ‘of/for Caleb’ in Joshua 14:14) the son of Jephunneh the Kenizzite.”
The Jewish scholars of Mechon Mamre also provide a parallel Hebrew – English Bible so that you can verify the translation of
Numbers 32:12 and Joshua 14 verses
6 and
14.
