Do we have any other Christian writings that are dated around 60-70 AD, besides the ones found in the New Testament? I believe the Didache is dated around this time. Anything else?
 
There were some non-canonical writings. Parts of the Book of Enoch dated to about 50 AD (or CE if you prefer). I believe there were others, but that one came to mind. Whether one counts that as Christian depends on viewpoint.

Dating is not certain in a lot of cases. Some sources indicate the Gospel of Thomas that early, but again, whether you count that as Christian depends…

The internet provides a fascinatingly inconsistent view of thar literature. Fortunately, the Church can guide us here.

Catholic Answers dates the Ascension of Isaiah to 70 A.D. in this article. They date the Odes of Solomon to 80 A.D. in the same article.

They date the Epistle of St. Barnabas to 74 A.D. in this article. And they date the Shepherd of Hermas to 80 A.D. in the same article. In this article they date First Clement to 80 A.D.

The Acts of Paul and Thecla is also noteworthy. Catholic Answers dates its composition to 160 A.D., which is far later than what you are looking for, but the book describes the life and words of St. Thecla, who had become a Christian before 64 A.D. and who knew the Apostle Paul. She died around 120 A.D., and there is evidence that the Acts of Paul and Thecla was based on the testimony of people who knew her.

No, they are all dated after that by most scholars both Catholic and Protestant. Most scholars date Didache from 90sh to 150 but some would argue it predates the G of Matt w its Jewish background but this is a minority opinion. Some also have argued for an early (1st century) dating of some of the Gnostic writings but again this is a minority opinion.
