Easter meal, whats on your table?

Normally, my family goes out for brunch on Easter. This year I am planning to make a meal at home. Planning on the regular ham, potato salad, grape salad, strawberry pretzel salad, roasted asparagus, and another green veg TBD. Not sure about dessert. this menue will likely change several times. I am sure DH will want some lamb. I will also be bringing a meal to a local family so these things seem pretty transportable.
 
We do sausage and hard-boiled egg sandwiches. That’s one way to use up Easter eggs.
 
I normally do a pork loin in the oven, or cut up the pork loin into chops and put them on the grill… with veggies (probably grilled asparagus and some fresh green beans) and baked potatoes…

We’ll be having 24 over this year! :eek:
 
sausage and hard boiled egg sandwitches sound interesting. any particular kind of sausage you use? Any condiments? intrigued.

I like making purple pickled eggs with the extra hard boiled eggs. I saw somewhere that people baked the eggs instead of boiling them and got a creamier consistency, and less of a sulphur smell.
 
Changing things up for us this year…pheasant and sausage gumbo.
 
Bun and cheese. They’re year-round Jamaican staples–I occasionally eat them as lunch–but the Easter version is much richer and has more fruit. My aunties bake enough for the entire family every year.
 
We always have a roasted leg of Lamb, mashed potatoes, asparagus, green beans, and crescents. Yum, yum, yum, yum, YUM.
 
We always have ham, mashed potatoes and the usu thing for my area. Kinda surprised at some of the different (but really cool) answers here!! 😃
 
For years my family always had ham – sort of. We’re cajun so we would roast a pig 😃 Plus my nanny’s rice dressing. That was my favorite.

Yum! We did a pig roast for our wedding reception. It was awesome. 👍
 
Mixed bag this year: Arugula stuffed leg of lamb, roasted potato salad with stoneground mustard, asparagus, likely grilled, arugula and spinach salad with raspberry vinaigrette. Rhubarb/strawberry pie with vanilla ice cream for dessert. Oh, I forgot the steamed mussels as a starter - a family favorite including the 16 year old.
 
My mom is coming to visit me. I’m getting confirmed and my hubby is away so it will be super nice to have a family member around me. I wasn’t able to go home for Thanksgiving and ended up having a yankee Thanksgiving. It was good, but not like the southern cooking I’m used to. So she has decided to cook me Thanksgiving for Easter.

Traditional at our house: ham, potato salad, deviled eggs, fresh asparagus and homemade ice cream, probably peach.
 
Parents are doing Chicken Cordon Bleu (my sister’s favourite/b-day dinner), but thinking of doing a Ham also (good ol’ traditional for my wife and I).

Thinking of trying to make an Easter bread this year (with hard boiled eggs in it). Years ago, in University, I went to my friends house for Easter. He’s Ukrainian Catholic and they had this Easter bread (very traditional) - let’s just say 10 or so years have passed and I still dream of it! 😃
 
Always the same thing: Mexican food.

I also do the purple pickled eggs, which I devil.

I wish I enjoyed lamb, but since I only like it grilled on a spit over an open fire, I content myself with a lamb-shaped pound cake. Other homemade goodies include shortbread biscuits and peanut butter cream eggs dipped in chocolate for everyone, with his or her name on in icing.
 
Kesho what kind of Mexican food are you having. I would happily have Mexican. We make confetti eggs every year which I think is a Mexican tradition.
 
BIG breakfast/brunch consisting of:
Sausage/cheese puffs
french toast monkey bread (my son’s latest concoction/creation)
homemade cinnamon coffee cake
fruit
ham & cheese omelets
banana nut muffins
bacon (once a year!)
and for dessert:
home made chocolate eclair ring

best thing is most of it can be made ahead of time, so we only have to make the omelettes that day.
