Latin rite Catholics have a brief prayer (grace) before meals. (Bless us O Lord and these thy gifts…)
Do Eastern rite Catholics have a different grace before meals? It seems that Eastern Catholics have very beautiful and elaborate prayers so I am wondering if they have a longer, more elaborate grace before meals.
I would love to hear from Eastern Catholics about their prayers.

I would think so, we’re all Catholics!!!

I love how the East goes out of its way to refer to Christ as our God… that emphasis on the Divinity of Jesus is something we Westerners just don’t emphasize enough.
 
The texts below, taken from “Прийдіте поклонімя” (Come Let Us Worship), a Ukrainian Greco-Catholic prayer book, are the ‘long form’ for pre-/post- meal prayers. I’ve assembled the English translation from a few sources.

BEFORE BREAKFAST / NOON MEAL
Our Father…
Glory to the Father, Son and Holy Spirit, now and ever, and unto the ages of ages. Amen.
Lord, have mercy. Lord, have mercy. Lord, have mercy. Bless.
Christ God, bless this food and drink for Your servants, for You are holy always, now and ever, and unto the ages of ages. Amen.

AFTER BREAKFAST / NOON MEAL
We give thank to You, Christ our God, that You have satisfied us with Your earthly blessings; deprive us not also of Your Heavenly Kingdom, but as You did come into the midst of Your disciples, Saviour, and did grant them peace, so come also unto us and save us.
Glory to the Father, Son and Holy Spirit, now and ever, and unto the ages of ages. Amen.
Lord, have mercy. Lord, have mercy. Lord, have mercy. Bless.
Blessed is God Who shows mercy and feeds us from His rich bounties, through His grace and love for mankind, always, now and ever, and unto the ages of ages. Amen.

As with all things “Byzantine” one will find much variation among the Eastern Churches.
