In some of these eastern Catholic churches the jurisdictions are exarchates, administrations, or ordinariates which do not come under the jurisdiction of the Metropolitan, Major Archbishop, or Patriarch.

Your list as regards the United Kingdom is sadly out of date .

Bishop Hlib Lonchyna is the Exarch for the United Kingdom and he is also the Apostolic Visitator for Ireland.

His predecessor was Bishop Paul Chomnicky , who is now Bishop in Stamford

A little update - the Apostolic Exarchete of Argentina of the Melkites is currently vacant, since Bishop Abdo Arbach is the recently elected Melkite Archbishop of Homs, Hama and Yabroud.

I listed them together because that is how the Annuario Pontifico of the Vatican lists the three jurisdictions: The Italo-Albanian Byzantine Catholic Church

Does the monastery and it’s dependencies constitute a Sui Iuris particular church?
 
It has an interesting history doesn’t it? This topic leads naturally to the types of jurisdiction. The basic jurisdiction is the eparchy (or diocese) with a bishop. But there are equivalents. Every jurisdiction that I posted is tied directly to the Holy See.

Giga-Catholic list many types of jurisdictions, where Santa Maria di Grottaferrata is listed as a Territorial Abbacy.

The 2012 Annuario Pontifico or Ronald G. Roberson, CSP is listing the Byzantine eparchies in Italy differently now (was the Italo-Albanian Byzantine Catholic Church), in the statistics:
