Beside Catholic dogmas, what about the Holy Scriptures? I’ve heard that the East often has more books in Scripture than the West.

a handful… None of them condemned by any council, but none of them approved for use in the Liturgy.

3&4 Maccabees are good reads.

Oh, and the psalms are numbered slightly differently.
 
The Ethiopians have 35 books in their New Testament (the eight books of the Apostolic Constitutions) and two more books in the OT (Book of Jubilees and that of Enoch).

The Assyrians have only 22 books in their New Testament. The Celts used to regard the Shepherd of Hermas and the Apostles Creed as New Testament books. Clement’s First Epistle was often read as part of NT scripture as well.

Fourth Maccabees is not part of the Canon of the Orthodox OT but is sometimes included in Greek editions for inspirational reading.

No, otherwise, the Holy Spirit would not have descended in the form of a dove at Jesus baptism in the Jordan.
In the “economic sense” yes - but in terms of the internal relations of the Trinity, yes (and I realize the Orthodox East does not accept “Through the Son” except in the Economic sense alone).
