Please explain why the eucharist liturgy is meant to be the source and summit of our spiritual lives.

It’s expressed many ways. You will find a way to describe it in a way that best fits your spiritual connection with Jesus.

The Liturgy of the Eucharist is the fulfillment of both the Old and New Testament.

Eucharist, as Jesus instructed, is where Divinity meets humanity. The one location where you accept and receive Jesus, into your mind, your body and into your soul.

The Liturgy of the Eucharist is Jesus’ Last Supper and it is also celebrating His Wedding Supper. He marries Himself to you, to me, to His Bride the Church.
 
This is from the Catechism. Does it help to point you in the right direction?

The Eucharist is "the source and summit of the Christian life."136 "The other sacraments, and indeed all ecclesiastical ministries and works of the apostolate, are bound up with the Eucharist and are oriented toward it. For in the blessed Eucharist is contained the whole spiritual good of the Church, namely Christ himself, our Pasch."137
1325 "The Eucharist is the efficacious sign and sublime cause of that communion in the divine life and that unity of the People of God by which the Church is kept in being. It is the culmination both of God’s action sanctifying the world in Christ and of the worship men offer to Christ and through him to the Father in the Holy Spirit."138
1326 Finally, by the Eucharistic celebration we already unite ourselves with the heavenly liturgy and anticipate eternal life, when God will be all in all.139
1327 In brief, the Eucharist is the sum and summary of our faith: "Our way of thinking is attuned to the Eucharist, and the Eucharist in turn confirms our way of thinking."140
 
The Eucharist is Jesus–in person. And He is the source and summit of our spiritual lives.

Source = the beginning: the place where something begins, where it springs into beginning

Summit = the highest level attainable: the highest stage of developement

As Jesus said, He is the Living Water.

“If you knew the gift of God, and who it is that is saying to you, ‘Give me a drink,’ you would have asked him, and he would have given you living water.”

The woman said to him, “Sir, you have nothing to draw water with, and the well is deep. Where do you get that living water? Are you greater than our father Jacob? He gave us the well and drank from it himself, as did his sons and his livestock.”

Jesus said to her, “Everyone who drinks of this water will be thirsty again, but whoever drinks of the water that I will give him will never be thirsty again. The water that I will give him will become in him a spring of water welling up to eternal life.”

The woman said to him, “Sir, give me this water, so that I will not be thirsty or have to come here to draw water.” —John 4:7-15

On the last day of the feast, the great day, Jesus stood up and cried out, “If anyone thirsts, let him come to me and drink. Whoever believes in me, as the Scripture has said, ‘Out of his heart will flow rivers of living water.’” —John 7:37-38

While Peter was still saying these things, the Holy Spirit fell on all who heard the word. And the believers from among the circumcised who had come with Peter were amazed, because the gift of the Holy Spirit was poured out even on the Gentiles.

For they were hearing them speaking in tongues and extolling God. Then Peter declared, “Can anyone withhold water for baptizing these people, who have received the Holy Spirit just as we have?” And he commanded them to be baptized in the name of Jesus Christ. Then they asked him to remain for some days. —Acts 10:44-48

10:1 For I want you to know, brothers, that our fathers were all under the cloud, and all passed through the sea, and all were baptized into Moses in the cloud and in the sea, and all ate the same spiritual food, and all drank the same spiritual drink. For they drank from the spiritual Rock that followed them, and the Rock was Christ. —1 Corinthians 10:1-4
