Can an elderly couple have sex but the wife needs to reach climax manually but husband. Can she have more than one climax or not?
 
Not to be pedantic, but if you are asking "can" as in "are they able to?", and are they able to achieve satisfaction one way or another, that seems more of a medical question, than one having to do with Catholic morality.

If you are asking "can" as in "does Catholic moral theology allow this?":
  • Of course they may have sex, even though it can be foreseen to be infertile due to the age of the woman. They have a natural-law right to do this as something intrinsic to marriage.
  • How the husband and wife "do their business" is up to them, as long as the act culminates normally (completed coitus in the natural manner)
  • She may enjoy it to the extent of her ability, again, as long as the act culminates as I described
It's not entirely clear what you mean by "but husband". You might wish to clarify.
 
We can have intercourse. But I as the wife cannot get to orgasm until afterwards when my husband can manually bring me to orgasm. But we aren't sure if he can manually give me more than one orgasm?.
 
The husband may indeed cater to his wife in this fashion, as a means of completing the act, but as to "how long can it go on?", I'd be wading into an area that could vary with each situation.

If you are speaking of yourself, rather than a hypothetical situation that doesn't refer to any one couple, I really have to discourage such personal questions on this board. If you have further concerns, I would recommend asking a priest in confession (or even elsewhere) who is loyal to the traditional moral teachings of the Church in their entirety.
