Emergency baptism for the the unbaptised

Theoretically, if an adult relative (i.e. parent) was near death and unable to give consent (and one could reasonably assume that were they fit they would reject) would it be right to have that person baptised for the sake of their own salvation or would it be prohibited by the Church?

Also, consider the person’s right (exercised all their life according to your scenario) not to be baptised - even were it to be permitted by Holy Church - and their right to free will. Pax.
 
Absolutely not. In the US, in most situations, this could be construed as assault.

Yes.

Can. 865 §1. For an adult to be baptized, the person must have manifested the intention to receive baptism, have been instructed sufficiently about the truths of the faith and Christian obligations, and have been tested in the Christian life through the catechumenate. The adult is also to be urged to have sorrow for personal sins.

§2. An adult in danger of death can be baptized if, having some knowledge of the principal truths of the faith, the person has manifested in any way at all the intention to receive baptism and promises to observe the commandments of the Christian religion.
