I believe answer is simple; Anaphora of Addai and Mari is not missing words of consecration, it has them in implicit form- therefore our Lord becomes present when they are said in implicit form. I don’t have source on this though.
Perhaps because East used implicit words of consecration, East developed very explicit Epiclesis and held that that as when our Lord becomes fully present (or that we know for sure he is fully present), instead of West where implicit invocation of Holy Spirit and explicit Words of Institution are norm. But yeah, that’s just theorizing again
