I’m not a Priest or a Deacon but you will need to be more specific if you want a thorough answer. Are you referring to the time when the Priest raises the host and says “Blessed are you Lord of all creation…” or are you referring to the doxology?

During the Eucharistic Prayer, when the priest elevates the Host and Chalice just after they have been consecrated, there is nothing in the liturgical texts for him to pray, but I’m sure many priests have a private devotional prayer that they offer at that very moment. I know a common prayer (at least with laypeople) is to say (silently) “My Lord and my God” (Dominus meus et Deus meus) as St. Thomas the Apostle said to Jesus (John 20:28).
