My first suggestion is that you carefully use these terms correctly. A Eucharistic Minister is a validly Ordained Priest and Ordinary Minister of Holy Communion is the Priest or Deacon. A Lay person is always called an Extraordinary Minister of Holy Communion.
I would suggest that you form a training program for EMHC beginning with the Theology of the Eucharist using On The Holy Eucharist by Pope Paul VI , On The Eucharist in its Relation to the Church, and On The Mystery and Worship of the Eucharist by JPII. Then the proper Liturgical practice of the Church using the GIRM and RS. Two good books to use are Catholics and the Eucharist by Clark and *A Key to The Doctrine of the Eucharist *by Abbot Vonier.
