I was wondering about ex-voto plaques, would it be appropriate to make an ex-voto plaque thanking Our Lady of Fatima for my reversion, and requesting that it be placed beside my current parish’s statue of Our Lady of Fatima, even though it’s not exactly a miracle? What about making another one to place beside me own statue of Our Lady of Fatima in my room? (I’m even considering mailing one to Fatima itself, if it’s acceptable.)

Also, are their any rules or customs regarding ex-voto plaques? I know about the Hispanic custom of using milagros, but for simple ex-voto plaques, is there any rule or custom regarding the material used, what can be on it, &c.?

I’m sure you can make whatever respectful plaque you want to Our Lady for display in your own room.
If you are expecting your parish to display something you make, you might want to ask your pastor about that first. If they normally display ex-voto plaques then they might be open to the idea of yours. However, if they don’t normally display them, they may not want to go down that route because if they do it for one parishioner, they would need to do it for all.
