What sorts of things can one eat for the two “smaller meals” when one fasts?
 
As long as it doesn’t involve “flesh meat”, that is, walking -around or flying animals (cows, pigs- flying or otherwise, chickens, lamb, sheep, rabbits, squirrels, etc.), whatever one eats when one has the big meal- or any other meal. There’s no postscription on any other food, other than the abstinence from meat.
 
Nutritionally speaking, protein stays in the bloodstream longer and does much more good than a carbohydrate. So if you eat two scrambled eggs for breakfast instead of an english muffin, toast or cereal, it should sustain physical strength much better. A dish of cottage cheese for lunch is an excellent protein source rather than a dish of rice.

As for choices or quantities, each person is different depending upon what is needed to maintain physical strength, such as a 6’ tall man whose occupation requires much physical labor, compared to a 5’ slender woman who is retired.

Generally, the rule of thumb is that both smaller meals should not equal the full main meal of the day.
