“Stille Nacht” – tho’ I love it in English as well, the original German wrings tears every time.
Code: 
"Good King" or "Good Saint Wenceslas" -- a wonderful song and a beautiful illustration via story of what sainthood is. 

"Minuit chrétien" ('O Holy Night') -- also simply sublime in the original.
And for those who have never heard it, Joan Baez’s 1966 Christmas album 'Noel" has such beautiful renditions of all these songs.
 
'The Lord’s Prayer" sung by Mario Lanza. Was recorded for his Christmas album!
 
The first that comes to mind is, “O Come All Ye Faithful”. For some reason, I cannot sing “O come let us adore Him”, without tearing up or sometimes literally crying.
I think maybe it’s because I spent over 30 years away from the Church and all the time wasted, not adoring and serving God.

On the light side, I really like “Christmas Time Is Here”, from “A Charlie Brown Christmas”, written by Vince Guaraldi and Lee Mendelson.

Although it is listed under hymns for children in the Episcopal Hymnal 1940, it was always used during the procession with the Baby Jesus to the Creche on Christmas Eve.

It is a beautiful hymn called “Once In Royal David’s City”. My very favorite and I really do miss hearing it on Christmas Eve. I believe that Mother Angelica’s nuns sang it on one of their albums.

Your mention of "Once In Royal David’s City reminded me of singing in the choir in high school. We used “Once In Royal David’s City” as our recessional, but we used another wonderful hymn, not often heard, called “Lay Down Your Staffs” as our processional.

The video shows a choir using the hymn in a similar way (starting at minute 3:15) that we did many years ago.

And for Texans and anyone who likes western swing / Texas country, George Strait’s “When its Christmas Time in Texas”

Here’s a new favorite Christmas song of mine sung by Carrie Underwood and Michael W Smith. It is entitled All Is Well. It is very pretty and touches the heart – at least it did mine. I hope you enjoy it also.

Although I am not Christian, I greatly prefer the Christmas songs with a religious, rather than secular, theme. Al though there are several that came to mind, I’ve always enjoyed Long, Long, Ago, written by I can’t remember who, but I know it’s not the Katherine Parker melody, and arranged by a dear friend. I just remember the verses were in a minor key, and the refrain in the parallel major key, which I believe is A. If only I could figure out where my copy of that piece has gone.
