I’ve always wondered, where do eggs fall into this…

It’s not meat but does come from an animal.

I think the Church does say not to eat ‘luxury’ type seafood such as lobsters…

I think years ago, (prior to the 1960s) the lenten fast (One Full meal) for adults was for all forty days not just on Ash Wednesday and Good Friday.

Fast and abstinence has changed over the years. It was in the middle ages that for the Latin Catholic Church, meat, eggs and dairy products were generally abstained from. It is still the practice in some eastern Catholic churches, for days of strict fast, to abstain from meat, eggs and dairy products. For example, for the Byzantine Catholic Church today, those days are in Lent on Clean Monday (first day of Lent) and on Great and Holy Friday.

The Catholic Encyclopedia from 1909 edition has:
Moreover, since custom first introduced the collation, the usage of each country must be considered in determining the quality of viands permitted thereat. In some places eggs, milk, butter, cheese and fish are prohibited, while bread, cake, fruit, herbs and vegetables are allowed.
