What is the Catholic belief of the foundation of the world? Is it all of creation ? or did it begin with the seed of Adam and Eve?

God created the world in 7 days and He created Adam and Eve. Would the creation of Adam and
Eve be the end of Gods creating and the foundation of the world begin with the off spring of Adam and Eve?

I hope this question isn’t confusing.
