Friday dinner- what do you eat tonight?

I cup salad, vinagar on the side, with i strip of baked chicken, and water. I’m on a diet. 😦
 
Two boxes of thick’n’creamy mac’n’cheese mix, with the preparations modified as follows:
  1. The liquid that the mac is boiled in includes a large can of petit-diced tomatoes in juice.
  2. A heaping teaspoon of curry powder is added to the sauce mix.
  3. Two cans of Mexicorn are added.
  4. Several glops of Cheese Whiz are added for extra cheesiness.
It’s just as good the next day, with some cut-up smoked sausage.

Fridays we usually have sandwiches and a go-with, like soup or a salad. It’s been a tradition for years from the time that we both worked M-F and were tired and celebrated the arrival of the weekend. 🙂
 
The one main meal on Friday might be:

A veggie delight sub (toasted wheat bun, no dressing) from Subway with baked potato chips and a diet Coke. I add some StarKist tuna from the pouch. You would think I’d simply order the tuna sub but the dressing within Subway’s tuna is too high in fat.

An order of Italian cheese bread and a side salad from Little Caesar’s Pizza.

I made this for dinner tonight (Saturday), but since we’re also going to go to year-round meatless Fridays after I get married next month, this will make a good future Friday dinner.

Inspired by the nutmeg tips I got over in the Pasta Sauces thread, I made penne pasta with butter, parmesan and nutmeg. I used this recipe. Only changes were penne instead of fettucini and I let the butter brown slightly before adding the pasta water and nutmeg.

It’s major comfort food, like a fancy grown-up mac & cheese. Definitely not low fat, but my motto is all things in moderation so every now and again it’s ok. 🙂
