What made God change his mind besides the “sweet odor”? When He speaks of the desires of man being evil from the start is He talking about Orginal Sin or what? In some ways this is a little depressing as it appears as God is putting Earth and all the creatures ahead of man. Maybe this is where the first environmental movement started.

Probably, the interior disposition of the person offering the sacrifice.

The commentary in my old NAB says:
From the start: literally, “from his youth.” It is uncertain whether this means from the beginning of the human race or from the early years of the individual.
 
Thanks for answering. I am trying to read the Bible and I stress “trying” is the operative word here. I have questions on top of questions every time I read it. I guess I should cast about for some sort of guide to go with my reading before I drive myself and others crazy. Any suggestions from you folks out there would be greatly appreciated.

The Great Adventure Bible Study is awesome… see if your parish offers it. I used to skip the “begats” thinking it was just boring lineage, then Jeff Cavins explained how important it was… truly opened my eyes!
