Giving out Recipes

I don’t cook with recipes. When asked, I just tell what’s in it.

I do bake with recipes because u have to be exact. I share these.
I do this too.

Even if I wanted to tell you how to do it, I couldn’t really. I don’t measure things, except by eye. If I make something up and it’s good, I may list the ingredients so I don’t forget, but not the measurements.

Except for baking. Because that is chemistry.

But if it’s on Pinterest, I will share, I will even send you the link.

My mom made a killer cheesecake of her own recipe. She gave me the recipe (so she wouldn’t have to make it anymore 😉 ) I am the only one that has it. 🙂
 
My aunt made the most delicious fig-filled cookies. Several times I asked her for the recipe, but she would hem and haw and make excuses for not giving it to me. No one could get that recipe out of her. Well, one day the inevitable happened and she died. Now no one has the recipe. What a waste. I don’t understand the obsession with hoarding recipes. It is unnecessarily selfish to me and serves no purpose. Let’s face it, food is happiness. Why not spread the happiness around? 🤷
If she was Italian, they most likely were Cucidati. If you want a good recipe for them, Brown-eyed baker has a good one, it’s on Pinterest.
 
Here is another reason to not share, and I am not the only one this has happened to…

Someone gives you a recipe. Yum! You make it for people. Yum! They ask where you got it, can they have a copy. Sure! You give it to them. They leave out several key ingredients, or double other ones. Yuck! :eek:, and then, when people are eating it and asking about it, they think that’s the recipe **I **gave them. Nope, that’s not what I told them to do! 😛

Was your aunt Italian? My mom made fig filled cookies for Christmas. I don’t know what the recipe is either, it might be in her things. I do remember that the procedure was complicated, it had figs and nuts and different spices. She would grind the nuts and figs together with a meat grinder.

A lot of my mom’s recipes were just ingredient lists. She just knew the directions.

Among the things she made, that I don’t have recipes for were those cookies, struffoli, cannoli, s-cookies, lemon cookies. 😦

My mom made those, that was an all day event, my mom didn’t want us the kitchen when she was creating.

My mom and her sister had competing sponge cake recipes. My cousin has my aunt’s. (My aunt’s was better)

I am half Italian. 😉 When I make them, I make the filling one day, and the dough the next morning. Bake in afternoon. Try not to eat too many that night. 😃

Nothing makes it to the next day in my house. I’ve stopped making biscuits because all of them are gone within a few hours, after I spent so much effort making them.
 
Or freeze! (You can even do this with the dough!) Then you’ve done the same amount of work but get to enjoy longer. 👍

For anyone interested, Cucidati freeze really well! Don’t ice them til you take them out though.😉

If I remember correctly, my mom would make the filling in advance so the flavors mix well. When my dad passed away, she gave up baking many things. I know she hadn’t made cannoli for over 20 years. The shells were made on one day, and then she filled them the next. She made an s shaped cookie that were really good too. No clue on what the recipe is, or where she might have put it.

But her recipes were more like ingredient lists, and she knew all the steps. 😦 It’s so sad. She can barely use a spoon and fork now.

It’s not that difficult to make biscuits. Back when I still made them, after the kids left home I started making half batches so I wouldn’t be tempted to eat too many. Now I do a low carb version that’s a little bit workier, but makes only 1 biscuit at a time in the microwave.
 
The “base” is ground meat, breadcrumbs, and spices. Sometimes an egg depending on how well it sticks together. Sometimes I add diced bell pepper and onion. You can add a squirt of ketchup or barbeque sauce, or a few dashes of Worcestershire sauce. Bacon on top is delightful too.

Some people will top with a sauce or cheese to bake. 350 or 375 (even 400 for a smaller loaf) for 45 minutes to an hour.

We don’t make it often because even ground meat can be really expensive these days, but it’s very easy and tends to hold up well. I go by look and feel of the mixture, but it’s not always the same and it still turns out good. 👍
I use oats instead of breadcrumbs and the topping ground garlic, with equal parts ketchup and brown sugar. Tangy.
 
Mama made fresh tortillas daily. My middle sister stood next to her once and measured everything before she dumped it on the bowl as mama never used a recipe. Her older brother made her rolling pin. Hardest past is making them perfectly round.
 
The thing that bugs me are the “copycat” recipes that are almost NEVER like the restaurant dishes they are supposed to replicate.🤷
 
I believe it is always the recipe holder’s right to share or not. But, you can’t blame a person for asking! I consider it a compliment!
I commend you for being able to say no. I’m convinced that many people give bad recipes purposely when they should just say, “I’m sorry, it’s a family recipe.” 🤷
