During the singing of the Gloria, my priest bows at the *Dominus Iesus Christus, *but when I look in my Missal, I see no such instruction… is this an old custom?
Yes, it is an old custom. In the traditional Mass, the priest would bow his head every time he said the name Jesus, be it in the Gloria, Credo or any other prayer.
I know about the custom of bowing one’s head at the name of Jesus and Mary, etc… but this is a bow at the waist from the Dominus Iesus Christus through the Miserere Nobis of the Gloria… any ideas?

It appears to be pious practice that is not part of the rubrics.
Some who are somewhere between aware of the rubrics and overly aware of the rubrics would say that this is an abuse, as it is not called for.
There are really three positions re: the rubrics; following them, violating them, and issues which simply are not covered.
The third area could be argued (and is, sometimes vociferously) that it is actually a violation as there is to be unity in the Church; but many, if not most liturgists would say that it is not a violation of the rubrics. It is simply a non-issue.
