St David is the patron saint of Wales, and today is his feast day.

Why not try some traditional Welsh Cakes to celebrate?
I just made a batch, which were swiftly eaten!

8oz self raising flour
3oz butter/lard
1 egg
3oz currants
3oz sugar
pinch of salt.

Sieve flour and salt into a bowl. Cut up fat and rub in with fingertips. Add sugar and currants and mix w/lightly beaten egg to a firm dough. Roll out on a floured board to 1/4 inch thickness and cut with fluted cutter (round wiggly-edged cookie cutter). Place on pre-heated, lightly greased griddle or solid plate. The first side will take about 4 minutes. Turn heat off and cook second side for 3 mins. Serve fresh, even slightly warm.

🙂 I wish I had seen this earlier. My maiden name is Welsh, lol. But, I already made a pumpkin pie for tonight so no Welsh cakes.
