After the Consecration, and before the Domine Non Sum Dignus, one of the servers at Mass says “something” audibly; I’ve recently begun attending a Latin Mass again, and I don’t remember this particular bit from my childhood.
I am almost sure that it isn’t the priest who says it, because the voice is always different; it’s just a couple of words, and although I have been straining to hear, I can’t make it out.

Can anyone enlighten me?
 
No, it’s literally just a couple of words - not as long as a confiteor.
Perhaps I should ask Father after Mass one Sunday. There are always so many people waiting to speak to him that I must admit I have never made the effort to wait in line! - apart from wishing him “Good Morning” etc!
 
The server says Amen at the end of the Canon and after the * Pater Noster*. Shortly after that he says Amen after *per omnia secular saeculorum *and then Et cum spiritu tuo in response to Pax Domini sit semper vobiscum. Then the priest says the Agnus Dei and the Domine non sum dignus.

I remember some of this, but checked my St Joseph’s missal to be sure.

Actually, the server says Sed libera nos a malo at the end of the Pater Noster, and then the priest quietly says Amen.

When I think about it, that is the way I remember it. However, my 1950 St Joseph Daily Missal, which I was copying from, says the Priest says the Sed lbera . . . and the server says Amen. Maybe it is a typo.

It certainly would be. Are you saying that the priest is listed as saying the entire Pater Noster, including the sed libera nos a malo? That is odd.

Yes. Looking closer I see they have it the other way round in the English translation. Strange, I used that missal for years [including Dialogue masses and guiding my wife’s choirs through the rubrics] and never noticed.
 
Got it! I moved closer to the front of the church this morning, and I was able to hear and identify the words. I was wrong when I said that they are spoken by the server. It’s actually the priest who says the three words audibly, just after the Prayers for the dead: “Nobis Quoque Peccatoribus…”
But it’s very soft, almost an undertone, so it was hard to catch it.

My red Mass book tells me that these three words" are the only words in the Canon which the priest says in a somewhat elevated tone of voice, to symbolize an act of public self-humiliation…"
 
Yes, the words Nobis quoque peccatoribus are said at a slightly louder tone, as the priest strikes his breast.
