Has there ever been a time when God was not

Some beliefs teach that after a while God kind of takes a breather and “sleeps” or maybe when creation has been perfected decides to start another creation. We will be co-creators with him. 🤷

We don’t know exactly how it will be after the ‘last day’ - but I am sure it will be wonderful.
 
God is Eternal and can’t change so there is no way He can take a break.

If you think about it we are already co-creators with Him. Creation is still unfolding, it’s in a state of becoming. Since we have free will, we are expected to do His will. That is, help create the world He intended (through Christ of course, not on our own).

True. People often confuse the Literary devices contained within scripture with the metaphysical reality of God. To say that God literally rests is to say that there is potentiality in God and that God can run out of energy and needs to sleep like a human. The bible is very anthropomorphic about God. But it is clear that the Abrahamic faith does not truly see God in this fashion and therefore it is reasonable to assume that these are just analogies and poetic metaphors rather than adhoc contradictions. The bible is not a work of metaphysics and neither is it a science book.

If God started existing at some point he would NOT be God, not in the theist sense, anyway.

He would be a being, an imperfect being.

Also why would God take a ‘sleep’? Again a characteristic not of God but some imperfect being.

Why would God “lose interest” in his creation? Again a characteristic of an imperfect being.

So the beliefs you state might be interesting for a pagan, not a theist, I would say.
What you are citing sounds a bit like mormonism to me (but I doubt mormons believe exactly that).
