So I was at a Deacon’s house (to do a renew group with his wife) a few weeks ago and his wife had served this amazing curry cheese spread from a local grocer. I HAD to have it, but was absolutely SHOCKED at the price of $8 for a tiny tub:eek: . Anyway I bought it, then thought I am going to take that ingredient list and recreate it, use lower-fat cream cheese and then share it. I made it yesterday, and perfectly recreated it on the first go – my DH was saying he can’t tell the difference! (Yeah me! LOL Could have gotten expensive to keep making it…😛 ) This stuff is so amazing guys, if you are going to someone’s house for Thanksgiving I highly suggest you bring this. I think I might even give it as a Christmas gift with crackers. Without further ado:

Curry Cheese Torta

8oz Light Cream Cheese – softened to room temp.
2TBSP Dark Brown Sugar
1 1/2TBSP Curry Powder
1TBSP Apricot 100% Fruit Spread (but preserves will work in a pinch)
4 dried apricots, chopped and divided
1/4 cup dried cranberries, chop
1/4 cup cashew pieces, chop to 1/4" pieces

Mix first four ingredients in Medium bowl with mixer until well blended. Add half the chopped apricots and mix until blended.
Chop the remaining two apricots, the cranberries and the cashews, mix together. Taking a small, round plastic container or a regular flat bottomed bowl, spread the apricot, cranberry, cashew mix on the bottom. Spread the cream cheese mixture on top and smooth top to flat. If serving later, cover and place in fridge. If serving soon, or when ready to serve simply freeze for about 40 minutes, invert the torta onto a plate and lift the bowl off. Let come to room temp and serve with the following:

Benton’s Whole Wheat Crackers (yum, they are like biscuits, and oh so good)
Apple and Pear Slices
Grapes
Fresh Bread
Baked Pita Crisps

Well just about anything!

Again: YUM!!!
 
I used Hot Madras Curry Powder yesterday – and it’s not too spicy at all.👍

Oh should be a yellow curry though…
 
Sounds like something my sister in law would like, I just might give it a whirl.

Husband is taking toddler to see his family for Thanksgiving, so I’m on my own 'till Friday. I have school and a dr appt. Tues and Weds, so I’m hoping to find something easy to bring to my mom’s for dinner. A no-bake idea like this sounds good!

Yeah… and somehow I know it will be ruined by me worrying about the two of them the whole time. :rolleyes: I’m not much use to anyone right now, the dreaded final weeks of pregnancy have definitely started to take their toll. I certainly would have zero patience for socializing with in-laws! I’m looking forward to napping, and having the whole bed to myself where I can shake these restless legs to sleep at night.
 
This sounds like a currish - version of Jezebel dip (and I love love love me some Jezebel dip).

You know, I think most of the reason moms don’t get a break is cuz we just don’t allow ourselves to take them. We should organize a CAF mom weekend somewhere and bring KC’s cheese.

My husband has taken several weekenders for biking or fishing since our son was born. There’s just this massive pull that I have that disallows me from even thinking too much about taking a solo trip away from home like he does. Not healthy I think.

Yeah, I’m out for the next year and a half at least…😛

I’ve got everything I need now for the torta except the fruit spread and the cashews. Will let you know how it turns out!
 
It is lip-smacking good, and works very well with water crackers.

Oh yum! I LOVE curry anything mmmmmmmmmm. i think I have all these ingredients, so it’s going to be made today for a thankgiving appetizer. Thanks KC:thumbsup: I couldn’t be more sick of spinach dip…
 
Oh, but I have to try it with Tofutti ‘cream cheese’…will report back.

I just wanted to say thanks for sharing your recipe! I made it several times from Thanksgiving to Christmas and got rave reviews from all who tried it. Even those I thought might not like curry!

We had a bumper crop of the hard type of persimmon and I sliced some of them and served with it. Perfect match!
