Healthy QUICK meals...I need help

Here’s something healthy, quick and so tasty:

It’s a Garlic / Rosemary Chicken

1 t olive oil
1 t butter
2-3 cloves garlic ( I use 5 or 6)
boneless chicken breasts ( I use 5 oz)
rosemary
chicken broth
white wine (cooking wine or regular) - can be substitued with broth

In a large skillet, melt butter in olive oil. Brown garlic w/o burning. Add chicken. Brown on both sides. (Do not cook them through) Sprinkle fresh or dried rosemary on top of chicken. Add chicken broth. . .anywhere from 1/4 cup to 1 cup depending on how much broth you want. Add the same amount of wine (1/4 cup to 1 cup)

Put a lid on the skillet, turn stove on low and let it cook for about 30 minutes, until chicken is cooked through.

I mix white rice and brown rice and serve this over the rice. My husband prefers a lot of “juice” with his. I have made it with and without wine. I prefer the taste with the wine.
 
I am not the household cook but one of my occasional efforts in quantities for two is:

Tin of kidney beans or lentils or equivalent
About 2 moderately-heaped tablespoons of falafel
1 serve of packet cup soup, the spicier/hotter the better (I use a spicy lentil)
Garlic or chopped onions to taste
2 small potatoes
Mozzarella cheese
Olive oil

Mix falafel with enough water to make a sloppy mix and set aside.

Lightly boil potatoes.

While potatoes boil and falafel hydrates, dump beans/lentils, garlic/onions and mozzarella to taste in a bowl and mix together. Add packet soup to falafel mix and add more water if needed. Add falafel and soup to beans etc and mix it all up and add a little bit of oil, again to taste. Put bean etc mix into small ramekins or single-serve sized baking dishes. Slice the potatoes thinly and make a “lid” over the bean mix by covering it with the slices. Sprinkle mozzarella over the potato slices. Put in oven till mix is heated through and the cheese has browned. Serve in the ramekin dish on a normal dinner plate next to a side salad or on a cork mat to protect the table from the hot dish.

I don’t always bother with the packet soup as I like the falafel on its own. The falafel and soup will absorb moisture so make sure that part of the mix is moist enough or the end result will be a bit dry.

You could do it all in one lot in a bigger baking pot and then serve it up with an egg slice but with just the two of us, two ramekins is simpler.

This is a scream, me posting an original recipe on a web site. I think I need to go lie down for a bit. 😃
 
A friend loaned me the “More with Less” cookbook - all I can say is 👍 👍 👍

IMHO, every family should have this cookbook in the house.

From the second edition on, it wasn’t my fav. But the very first one- THAT is THE one to have!!!
 
Crockpot Lasagna:
2 jars of spaghetti sauce (grate in veggies to hide them!)
4 oz Lasagna noodles (whole wheat)
2 8 oz packages of shredded mozzerella cheese
1 12?oz container of ricotta cheese - not the smallest one they have, but next one up… Heck, just get whatever and put it in, the more the merrier

So you just layer everything anyway you want. This is what I do:
Mix all the ricotta with all the mozzeralla, add some salt and pepper if you’d like.
Put one of the jars of sauce in the bottom, a layer of uncooked (that’s the nice part about this recipe) pasta, half the cheese mixture, a layer of pasta, another jar of sauce, another layer of pasta, then the rest of the cheese. I think I put it on High for around 3-4 hours, but I’m sure it’d work on low for maybe 6-8 or so.

lasagna in a crockpot:hmmm: …i will have to definitely try that. Truly would never have thought of that. You know, my dd was just talking about stew and how she ‘misses that dish.’ I guess since moving to Florida, I don’t cook as much, neither does hubby, and he really likes it more than me–I think we have let some of our winter favorites go by the wayside because of the weather.😊 But…I am going to make crockpot stew this weekend.
 
My mom would make bacon, lettuce, and tomato sandwiches - you could always toss a fried egg on there.

We’d also have “pizzas” with whole-grain english muffins, spaghetti sauce, then canned pineapple or sliced ham on top. You could also have a tuna melt with the same english muffins - just put tuna on top and cover with cheese and a tomato slice and pop into the plug-in oven for a few minutes.

Or take a casserole dish and layer chicken breast on the bottom, mixed with cream of mushroom soup, then layer Stovetop stuffing on top, cover with cheese and cook it. It is GOOD.
 
Veggie fajitas with onions, red and green peppers, portabello mushrooms, and fresh avocado. Refried black beans are good with this too. 🙂
 
My kids are not really that picky. I have one that is fussy. He doesn’t like any food to touch. :confused: So, if I make stew, I separate stuff on his plate: the meat in one pile, carrots in another, green beans. . etc.

I don’t like the idea of making 2 meals, never have. So, if I KNOW I am making something he has tried before and will not eat, I do make him something simple.

If I make something new, and he tries it and doesn’t like it, he gets cereal or leftovers.

I made moussaka (spelling??) and 3 of my 4 ate it. My picky one told me it looked like “puke in a bowl.” He got in trouble for that. That’s a long way from, “I don’t care for it, but thanks, Mom.” 😉
 
Anyway. . I really wanted to give you this quick and easy recipe that is loved by all in my house.

2 whole chickens ( I have big eaters. You could use one)
garlic (fresh or powder)
rosemary
olive oil
salt

combine the ingredients and rub them over the chicken. I rub them under the skin, over the skin, inside the cavity. . .

Put them in the crock pot and put a lid on. I’m sure there are more accurate number for how long you put it in the crock pot. But I put it on high for about 4-5 hours.

OR

Put them in a roaster, cover it and bake it in the oven on 350 for 2 hours.

I have also done this on the grill . . .

Awesome taste. And, then except for the grilled carcases (sp), I use the carcas to make soup. It makes good chicken soup.
