Help identifying this Saint

This one has been bugging me for weeks.
At the church we attend the TLM, there is a statue of a Saint I have never seen before. She is over a bank of votive candles. She is holding a plate or platter with what looks for all the world like two eyes laying on it.

Any idea who this is?
