If the Mosaic Law is fulfilled then does that mean we don’t follow it?

I’m trying to understand as to what happened to the Mosaic law

Does this mean we don’t follow the Mosaic law anymore?
 
Depends very much on definition of Mosaic law.

Mosaic Law includes the 10 Commandments, which is one example of Mosaic Law very much intended for all of God’s people, and not just the Jews.

Ritualistic Law, sometimes referred to as “Levitical Law” was more sacramental in nature, and this law, as you say, was intended for the Jewish people and the administration of (especially) early Judaism.

I think that you are considering the Judaic practices (Temple offerings, tithing, and the Mosaic Law as applied by the rabbis [the 600+ amendments/definitions]).

These were in place until the fullness of times:
1 Now I say, as long as the heir is a child, he differeth nothing from a servant, though he be lord of all; 2 But is under tutors and governors until the time appointed by the father: 3 So we also, when we were children, were serving under the elements of the world. 4 But when the fulness of the time was come, God sent his Son, made of a woman, made under the law: 5 That he might redeem them who were under the law: that we might receive the adoption of sons. 6 And because you are sons, God hath sent the Spirit of his Son into your hearts, crying: Abba, Father… (Galatians 4:1-10)
Now, what was part of the Old Covenant did cease to usher in the New Covenant:
20 In the same way, after the supper he took the cup, saying, “This cup is the new covenant in my blood, which is poured out for you. (St. Luke 22)
In the New Covenant the Law (Ten Commandments) and the Prophets are fulfilled:
17 “Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them. (St. Matthew 5:17-20)
37 Jesus said to him: Thou shalt love the Lord thy God with thy whole heart, and with thy whole soul, and with thy whole mind. 38 This is the greatest and the first commandment. 39 And the second is like to this: Thou shalt love thy neighbour as thyself. 40 On these two commandments dependeth the whole law and the prophets. (St. Matthew 22)
So you see, the Old Covenant practices (sacrifice offerings and doctrinal practices) have passed away; yet, the Law of God and His Demand for Worship has not:
20 Our fathers adored on this mountain, and you say, that at Jerusalem is the place where men must adore. 21 Jesus saith to her: Woman, believe me, that the hour cometh, when you shall neither on this mountain, nor in Jerusalem, adore the Father. 22 You adore that which you know not: we adore that which we know; for salvation is of the Jews. 23 But the hour cometh, and now is, when the true adorers shall adore the Father in spirit and in truth. For the Father also seeketh such to adore him. 24 God is a spirit; and they that adore him, must adore him in spirit and in truth. (St. John 4)
1 For the law having a shadow of the good things to come, not the very image of the things; by the selfsame sacrifices which they offer continually every year, can never make the comers thereunto perfect: 2 For then they would have ceased to be offered: because the worshippers once cleansed should have no conscience of sin any longer… 7 Then said I: Behold I come: in the head of the book it is written of me: that I should do thy will, O God. 10 In the which will, we are sanctified by the oblation of the body of Jesus Christ once. (Hebrews 10:1-39)
