History of Fasting in Roman Church Question

Hello All,

In the East there is a specific Lenten fast. We abstain from All meats, white fish, eggs, dairy, alcohol, olive oil, and (married couples), sex. On Sundays we have some wine in celebration of the Resurrection. On March 25 we have some white fish in honor of the Annunciation. The Easter egg breaks the fast. It is also traditional for a family to make up a basket of foods that were not taken during Lent for blessing by the Priest at the Easter Service.

This is not the case in the West where I’ve noticed people choosing their own fasting technique. When did this practice begin in Rome? Why do people choose their own? Do Roman priests do this fast, but not the laity?
