I worry sometimes that my hobbies may be becoming too important. I very much enjoy doing them in my spare time, but try hard not to sacrifice my prayer schedule for them. When does enjoying and doing things of the world, such as hobbies, become too much?

That would depend greatly upon your disposition, temperament, and spiritual state. I would take this question to a trusted priest, such as your confessor or, if you have one, a spiritual director. That said, there’s nothing wrong with having hobbies as concerns trying to be holy as well (provided your hobbies are not sinful in and of themselves, of course). I know plenty of priests who enjoy taking in a ball game or going hunting or to the rifle range. Leisure is a good thing–God gave us a day of rest, so we should use it to do just that, rest. Even monks in monasteries take time off from their daily schedule to just have a little free time. So don’t worry too much about it. Talk to your priest to kind of figure out where the boundaries should lie, but I wouldn’t get too worked up about it. You can have both hobbies and a fruitful spiritual life.

I don’t know about you, but I pray during some of my hobbies (hiking, karate, etc). Maybe that can help you?

It’s great that you have a prayer schedule, and try to keep to it! If you have that, then you won’t be able to go too far wrong with anything else.

Just another thought, in addition to the good advice in the previous posts… It depends on one’s stage in life. When you are young, you will have more time for hobbies, then, when you have a family and financial burdens you will have less time, and then, as you approach old age, you may have more time again. So, if you are young and single, I would encourage you to spend a little more time with your hobbies, so that it is easier to maintain them, with less time, once you are married. It could make a big difference to your own health, and the health of your marriage, if and when the time comes.
