How are saints days chosen?

Hello,
My 14 year old son asked me a question to which I did not know the answer to: how does the Church pick the dates to celebrate the different saints?
 
The usual method is to use the day that they died (entered heaven). If the date of death is unknown then the Church will use either the day the saint was canonized or a date that is of particular importance for the saint.
