How can gluten intolerant Catholics receive the Eucharist?

Is anyone out there gluten intolerant? Do you take communion? I do. I was told it is acceptabe to just have the wine for communion if it is offered. I kinow priests have found out they are gluten intolerant after they have become priests. I wonder how they make out? Gluten intolerance or celiac disease is the inability to digest wheat and other grains.
