How can I explain & defend my belief that the priest at Mass transforms the host into the Body and Blood of Christ?

“This is My Body. This is My Blood. Do this in memory of me.” I can’t defend my belief that the priest at Mass transforms the host into the Body and Blood of Christ. To most people, this is a memorial service, not a commandment by Christ that all priests will be given the power to transform bread into His body and blood.
