How can the Church have the authority to change the Sabath from Saturday to Sunday?

This is the question posed to me by my teen. She has Jewish friends that question her earnestly about her Catholic beliefs, but she has a hard time understanding how the Church can change dates. She understands why, she doesn’t get how. It’s an authority issue. She started out with the whole Sabbath thing and now is starting to question how the church can just go and change the feast of All Saints from spring to fall.

It’s pretty much an authority issue which I think stumps many people.
