How do I explain why priests don't marry?

I got into a debate with an ex-catholic who believes priests should be allowed to marry. She claimed that priests were allowed to be married up until the 1500’s. I know the priest is considered married to his bride the Church but could you tell me how this came about and the philosophy behind it so I can better defend our faith. Thank you.
